You: individual with a keen sense of sourdough bread making, meticulous and passionate about his/her craft looking to expand their knowledge and understand the process in a artisanal/commercial setting. The ideal candidate would be very familiar with French breads and pastries, from mixing the ingredients, to shaping baguettes and sourdough loaves, baking in a deck oven as well as convection. You will join a growing team of bakers in our production space in Montclair.

Essential functions:
Be able to work overnight (starting at 10pm through 6am the next day), including weekends.
Check production list and manage production without supervision to meet daily needs
Identify and select ingredients, prepare, shape, and bake French pastries, bread and viennoiserie
Produce and garnish pastries, viennoiserie, bread, sandwiches as instructed
Organize and manage stocks
Ensure that all perishable items are stored quickly and efficiently, thus avoiding unnecessary quantities being held within the pastry production areas, always ensuring complete utilization of all items with minimal waste
Comply with and fully understand the laws and regulations regarding food safety, health and safety using different equipment
Perform all necessary cleaning duties and contribute to the overall cleanliness of the daily production at all times and within all sections
Communicate effectively to owner regarding inventory, product pars, and production levels
Adhere to the strict policies regarding personal grooming and hygiene
Ensure all accidents are reported to the owner and/ or supervisor, such as equipment damage or injuries
Attend all briefings and meetings as required
Requirements:
2 years of experience in an artisanal bakery or similar environment or a professional degree in culinary, pastry, bread/viennoiserie
At least one year of experience with French pastry, bread and viennoiserie preferred
Be able to work in a standing position for long periods of time (up to 10 hours)
Availability to work late nights and on weekends
Ability to maintain regular, punctual attendance consistent with the federal, state, and local standards
Must understand knowledge of high quality products and be passionate about bread, viennoiserie and pastry
Must be able to lift and carry up to 50lb
Compensation commensurate with experience.
