Job Description:
We are seeking a skilled and creative Garde Manger to join our culinary team at Leonard's Palazzo. The Garde Manger is responsible for the preparation and presentation of cold dishes, including salads, appetizers, charcuterie, and other specialty items. This role requires a keen eye for detail, a passion for culinary excellence, and the ability to work efficiently in a fast-paced environment.
Key Responsibilities:
- Prepare and present a variety of cold dishes, including salads, appetizers, terrines, pâtés, and charcuterie.
- Ensure all food items are prepared according to the highest standards of quality, taste, and presentation.
- Maintain cleanliness and organization of the garde manger station and cold storage areas.
- Collaborate with the Executive Chef and other kitchen staff to develop new menu items and seasonal specials.
- Monitor inventory levels and order supplies as needed to ensure the availability of fresh ingredients.
- Adhere to all health and safety regulations, including proper food handling, storage, and sanitation procedures.
- Assist in training and mentoring junior kitchen staff as needed.
- Participate in menu planning and contribute innovative ideas for cold dishes and presentations.
- Ensure timely preparation and delivery of all cold dishes for events and service.
Qualifications:
- Proven experience as a Garde Manger or similar role in a high-volume, upscale dining establishment.
- Culinary degree or equivalent professional training preferred.
- Strong knowledge of cold food preparation techniques, including butchering, curing, smoking, and pickling.
- Excellent knife skills and attention to detail.
- Ability to work well under pressure and handle multiple tasks simultaneously.
- Strong organizational and time-management skills.
- Knowledge of food safety and sanitation regulations.
- Creativity and a passion for culinary arts.
- Strong communication and teamwork skills.
