The Food and Beverage Purchasing Manager is responsible for analyzing needs, purchasing, receiving, and storing all food and beverages for the hotel. This role ensures quality products are consistently maintained, waste is minimized, and costs are controlled.
Essential Functions:
- Procurement Management:
- Order all food and beverages for the hotel.
- Analyze needs, maintain par levels, and evaluate prices and quality of supplier goods.
- Control food and beverage costs while ensuring the right quality and quantity of products.
- Receiving and Inspection:
- Receive and inspect food and beverages, ensuring they meet hotel specifications.
- Verify invoices for accurate charging.
- Storage and Waste Management:
- Direct the labeling, dating, storage, and rotation of all foodstuffs to avoid spoilage.
- Maintain health, sanitation, and safety standards to control waste.
- Beverage Security:
- Oversee the storage and security of all beverages to prevent loss.
- Ensure compliance with legal regulations and hotel standards.
- Inventory Monitoring:
- Monitor inventories and associated costs through logs, reviewing, and processing invoices.
- Utilize MIS systems for inventory management.
- Administrative Duties:
- Perform various administrative and cost analysis duties related to the food and beverage division.
- Price Evaluation:
- Regularly evaluate prices to ensure cost-effectiveness and quality.
- Conference Calls:
- Participate in weekly conference calls to discuss procurement strategies, cost analysis, and vendor performance.
Skills and Abilities:
- Working knowledge of food and beverage purchasing services, policies, and operations.
- Proficiency in computer equipment and other technical devices.
- Ability to investigate and analyze current activities or information in a specialized field and make logical conclusions and recommendations.
- Strong communication skills for interaction with hotel employees and guests.
