PRIMARY RESPONSIBILITIES:
The Pastry Chef at Colasantis prepares and creates bakery products from start to finish. The pastry chef is responsible for creating new recipes and desserts, and must also be able to follow established recipes to achieve product consistency and quality standards set forth by the owner. This includes maintaining a sanitary work area during and after work processes are fulfilled, following safety requirements, measuring, mixing, pouring, shaping cakes and pastries, observing proper baking temperatures and times, and applying proper toppings, glaze’s and finishes to the final product. This position requires excellent time management skills and the ability to work quickly and under pressure.
All applicants must be able to provide a portfolio of work if being interviewed . JOB REQUIREMENTS:
- Baking and Pastry Arts degree AND 2+ years of production baking experience
- Extensive working knowledge of classic pastry, cakes, fillings, and desserts
- Knowledge of standard recipe production procedures
- Ability to work well in a busy environment both independently and as part of a team
- Ability to work on your feet for extended periods of time (8+ hours a day)
- Ability to work flexible hours, including weekends and holidays (according to customer demand and as directed by the department manager)
- Ability to lift, push, or pull a minimum of 50 pounds
PERFORMANCE RESPONSIBILITIES:
- Contribute to menu creation of the Colasantis dessert line
- Create seasonal pastry’s and desserts
- Bring creativity to the current pastry offerings
- Ensure the consistent production of high quality desserts
- Make sure all product is baked and decorated according to Colasantis management standards
- Rotate product in freezer/walk-in using FIFO method
- Understand proper use of all equipment: ovens, mixers, scales, walk-in, and freezer
- Maintain a clean production area. Clean and sanitize all equipment, work area, containers, and utensils
- Be quick, accurate and organized
- Prepare special orders to ensure customer specifications are met
- Ensure operations are in accordance with food safety and sanitation standards. Would prefer if candidate had his/her safe serve certification.
- Greet, assist, provide efficient service and thank guests in a prompt, courteous, friendly and business-like manner
- Guide bakery staff on product questions and offer assistance in finding or suggesting product selection to customers
- Perform other duties as directed by a manager
