Position Overview:
We are seeking a talented and experienced Executive Sous Chef to join our culinary team at Leonard's Palazzo. The Executive Sous Chef will work closely with the Executive Chef to oversee all aspects of kitchen operations, including menu development, food preparation, staff management, and ensuring exceptional quality and consistency in every dish served.
Responsibilities:
- Collaborate with the Executive Chef in menu planning and development, incorporating seasonal ingredients, culinary trends, and client preferences.
- Supervise and coordinate food preparation activities, ensuring that dishes are prepared according to recipes, quality standards, and presentation guidelines.
- Train and mentor kitchen staff, providing guidance on culinary techniques, safety protocols, and sanitation practices.
- Monitor kitchen operations to maintain efficient workflow and minimize waste, while adhering to budgetary guidelines.
- Assist in ordering and inventory management, maintaining adequate stock levels of ingredients and supplies.
- Ensure compliance with food safety regulations and sanitation standards, conducting regular inspections and implementing corrective measures as needed.
- Lead by example, demonstrating professionalism, creativity, and a passion for culinary excellence.
- Collaborate with other departments to coordinate food service for events and functions, ensuring seamless execution and guest satisfaction.
- Stay informed about industry trends and innovations, continuously seeking opportunities for culinary improvement and innovation.
Qualifications:
- Proven experience as a Sous Chef or similar role in a high-volume, upscale dining establishment or catering facility.
- Culinary degree or equivalent certification from a recognized culinary institute.
- Extensive knowledge of culinary techniques, flavor profiles, and food presentation.
- Strong leadership and communication skills, with the ability to motivate and inspire a diverse team.
- Excellent organizational and time management abilities, with the capacity to prioritize tasks and manage multiple projects simultaneously.
- Knowledge of food safety regulations and sanitation practices, with a commitment to upholding the highest standards of cleanliness and hygiene.
- Creative flair and a passion for culinary innovation, with a focus on delivering memorable dining experiences.
