Job Description
The Assistant Pastry manager at Noble Bread would be responsible for operating the pastry area of the shop while working closely to the Pastry Manager. This includes to create high quality Noble Bread oriented pastries. Also assist in production and maintenance of par stocks of pastries with proper rotation of products and maintain highest cleanliness and standards according to Noble Bread. Be able to solve problems with effective solutions, see hidden problems and always look beyond the obvious and take smart and good decisions based upon wisdom and experience.
Responsibilities & Duties
- Assist Pastry Chef to motivate and manage a high-performance production team
- Help develop and create new products, set standards and refine processes
- Assist in solving staff issues and collaborate with management on correction and discipline of employees as necessary
- Train and develop baking team members to achieve maximum performance
- Quality control management/tasting. Process and troubleshooting quality issues
- Manage work priorities to effectively to create workflow and avoid unnecessary overtime
- Operation and care of bakery machinery including dough sheeter, mixer, ovens and dividers
- Proof and bake according to precise standard of doneness
- Maintain a clean and organized work area, following food safety and sanitation guidelines at all times
- Adhere to all company policies, procedures, and guidelines regarding food handling, safety and hygiene.
Requirements
- 4–6-year previous work experience in baking/pastry
- Prior management and leadership skills to help build and maintain a positive work culture in high volume; fast paced environment
- Ability to prioritize multiple tasks and utilize resources and tools effectively to maximize productivity
- Have experience with attention to food related cost and labor management
- Highly proficient pastry skills including proper mixing procedures, dough shaping, proper proofing and baking techniques
- Strong communication skills. Proficient in English in both written and verbal forms
- Strong bakery math skills
- Ability to manage multiple tasks and able to meet required deadlines
- Self-motivated and able to work inside a team
- Basic knowledge of bakery techniques, ingredients, and equipment
- Must have strong attention to detail and excellent time management skills
- Physical stamina to work standing for long periods of time, reach, walk, lift, grasp, bend and twist – as well to push and/or pull 350lbs (fully loaded oven racks/carts)
- Must be able to work in an environment with flour, milk, and nuts, and other allergens
- Ability to work intermittently with hot ovens and temperatures
- Must have a positive attitude and a high level of team centered culture
- Dependable and flexible with ability to work various shifts, weekends and holidays as needed

Pay: $50,000.00 - $60,000.00 per year
