Key Responsibilities:
The Gourmet Garage Central Kitchen (GGCK) which is located in the Bronx, NY near Hunts Point is a centralized commissary, owned and operated by Village Super Market, Inc.
The commissary produces fresh product in the bakery, prepared foods, meals to go and other perishable categories that provides Village the ability to expand and control centralized food production.
The GGCK drives production efficiencies, as well as ensuring high product quality and consistency, throughout Village Super Market’s 38 retail stores, as well as a growing number of other wholesale customers.
The plant is closed Wednesday and Sundays and there is free parking available at the facility. We also provide chef Jackets daily.
Position Overview:
We are seeking a skilled and diligent Salmon Butcher to join our team at our cold store production center. The ideal candidate will have experience in fish butchery, particularly with salmon, and be comfortable working in a cold environment. This role is crucial in ensuring the highest quality of salmon processing to meet our production standards and customer satisfaction.
- Responsible for ensuring proper receiving practices and that fish is received and held in the proper way.
- Efficiently and accurately butcher fish to company specifications, ensuring minimal waste and high-quality product.
- Operate and maintain various butchery tools and ensure properly sharp knives, following all safety protocols.
- Work in a refrigerated environment, adhering to all health and safety regulations to prevent contamination.
- Collaborate with the quality control team to ensure the product meets food safety standards.
- Manage inventory of supplies and equipment, reporting any shortages or malfunctions.
- Keep the work area clean and organized, following proper sanitation procedures.
- Assist in packaging, labeling, and storing processed fish as needed.
- Stay updated on best practices in fish butchery and participate in training sessions to improve skills and knowledge.
- Work closely with team members to meet production targets and deadlines.
- Proven experience as a fish butcher, specifically with salmon, is preferred.
- Knowledge of various butchery techniques and tools.
- Ability to work in a cold environment for extended periods.
- Strong attention to detail and commitment to quality.
- Excellent hand-eye coordination and physical stamina.
- Good communication and teamwork skills.
- Understanding of food safety and hygiene practices.
- High school diploma or equivalent; additional certification in meat processing or related field is a plus.

- This role requires working in a cold store environment with temperatures below freezing.
