GENERAL SUMMARY
The primary role of the Bistro Supervisor is to assure the highest level of guest satisfaction possible. This is done through active and ongoing engagement with guests, helping to establish, maintain & train all service standards & systems, and genuinely striving to assure that every guest's experience in the Bistro is exceptional. The Bistro Supervisor works closely with the Food & Beverage Management team in the day-to-day operations of the restaurant to achieve financial and organizational goals. In addition to the primary role, other responsibilities include but are not limited to, labor controls, product cost management, quality control, health and safety, and training of all cast members. Adherence to PRO's Guest Promise and Service Vision is a fundamental requirement of all Associates.

PRIMARY JOB FUNCTIONS
Assure the highest level of guest satisfaction possible
- Establish and maintain a culture of regularly engaging with all guests. This includes table touching during all meal periods and getting to know the names and preferences of as many guests as possible
- Help establish maintain and train all service standards & systems
- Assure that all service staff adheres to the same engagement expectations as defined above
- Assures that all associates are actively following the cycles of service as defined by the PRO & Bistro Management Team
- Provide regular and ongoing product sampling to guests as a gesture of appreciation
- Understand and follow through with excellent service recovery practices
- Assist in achieving sales & cost goals
- Work with other members of the management team to develop in-house sales contests & strategies
- Have working knowledge of departmental financial statements and expected controls in order to effectively contain costs
- Assist in monthly product inventories as needed
- Observe portions served and report any discrepancies to kitchen management
- Monitor daily staffing levels in relation to current business volume
- Assure that all product quality control standards are adhered to at all times
- Assure that all food and beverages delivered to guest are of the high-quality standards approved by senior management
- Perform daily quality control checks in coordination with Food & Beverage Director & or Chef
- Follow up and report on any observed negative quality issues
Hiring & Training
- Adhere to PRO's service aptitude and appearance standards when assisting with recruiting and hiring
- Assists other members of the Food & Beverage Management Team to ensure all associates are properly trained in Bistro service, quality and timing standards
- Assist Management with conducting monthly Bistro service staff meetings and daily warm- ups
- Promote teamwork as a way of life in the Bistro
Maintains a safe & secure environment for all associates and guests
- Ensure all Serve Safe practices are followed
- Ensure all restaurant equipment in proper working order
- Monitors and assures that all Food Worker's Permits and Mandatory Alcohol Server Training (MAST) Permits are current for all Bistro service associates.
Requirements:
KNOWLEDGE, SKILLS, ABILITIES AND OTHER REQUIREMENTS
Knowledge Required
- Strong food, wine and liquor knowledge
- Details of casual to fine dining service & day to day operations of full service
- Staffing schedules, analysis of sales/labor relationship
- Competent in Microsoft Office products
- Working knowledge of restaurant point-of-sales systems
- Comfortable with use of Internet and willingness to learn use of PRO's Intranet
Skills Required
- Excellent customer service aptitude
- Cash handling & reconciliation
Abilities Required
- Ability to multi-task & handle several different responsibilities at once
- Ability to follow through on commitments and projects
- Ability to communicate effectively both verbally & in writing to maintain positive relationships with associates, guests & purveyors
- Ability to recognize problems and find creative solutions, to set priorities & make decisions
- Ability to develop cast through leading by example, coaching and instruction
- Ability to work varied schedules including evenings, weekends, holidays & extra hours when required
Physical Activities/Requirements
This position requires a high level of physical activity in a fast-paced environment. Conditions include working several straight hours on foot, and at times working around hot cooking equipment or in cold storage facilities. The ability to lift 40 lbs is a requirement of this position.
