POSITION SUMMARY:
At Tony’s Mexican Restaurant we are looking for a hard-working prep cook to be responsible for setting up workstations in the kitchen and preparing ingredients for the cooking process. The prep cook is required to perform basic cooking duties, monitor stock levels, and take culinary tasks as they arise.
To be a successful prep cook, you should understand and be willing to comply with food and sanitation guidelines and regulations, be quick and diligent, and be willing to improve on the job. A top-notch prep cook should be able to follow instructions and work in a fast-paced environment.

SPECIAL KNOWLEDGE, SKILLS, ABILITIES
- Must be at least 16 years of age

ESSENTIAL FUNCTIONS
- Prepare a variety of meats, seafood, poultry, vegetables and other food items using broilers, ovens, fryers, grills, and a variety of other kitchen equipment, according to our recipes.
- Knows and complies with our standard portions, cooking methods, quality standards and kitchen rules, policies and procedures
- Stocks and maintain sufficient levels of food products at line stations and assure a smooth service period
- Portions food products prior to cooking according to standard portion sizes and recipes specifications
- Maintains a clean and sanitary work area including tables, shelves, grills, broilers, fryers, ovens, burners and refrigeration
- Follows proper plate presentation and garnish set up for all dishes
- Handles, stores, and rotates products properly
- Follows the opening and closing checklist to properly close the kitchen
Other Functions:
- Keeping track of ingredient inventory and collaborating with other kitchen and management staff to order resupply
- Cleaning dishes, washing cooking utensils and cookware, taking out the trash and sanitizing the kitchen if needed
- In various occasions they help prepare various food items for cooking or serving
- In cases helps in the dishwasher area and functions
- Assist in opening and closing procedures for the kitchen area
- Make sure kitchen staff always maintains a sanitary work area
- Make sure kitchen staff maintains a harmonious relationship with all employees
- Attend all scheduled meetings and provide suggestions for improvement
- Other duties as assigned by kitchen supervisor / manager

Education: High School Diploma or general education degree (GED) preferred
Culinary school training
Experience: At least 6 months preparation experience
Working Conditions:
- Walking and standing for extended periods of time
