A unique restaurant and lounge in NYC is looking to hire experienced BOH Team Members!
BOH Team Members provide overall support to daily kitchen and guest foodservice operations, including food preparation, organizing, and labeling all food items, keeping workstations and the overall kitchen clean both before, during, and after service. They are also tasked with final execution of dishes and plating in accordance with the restaurant’s menus specifications and presentation standards. They are to follow all safety standards. A key area of the job is cleaning the kitchen and entire BOH area as well as organizing food, tools, small equipment, and other items in the stockroom..
Candidates must be 21 years old or older for employment.
ESSENTIAL FUNCTIONS:
Food Preparation & Storage
· Perform routine kitchen tasks.
· Label and stock all ingredients on shelves so they can be organized and easily accessible, and follow FIFO guidelines (First In, First Out).
· Make sure all raw food is handled properly in order to avoid contamination and/or cross-contamination.
· Ensure that all food and other items are stored properly after being prepared.
· Store food order in accordance with health department standards.
· Keep all food bins and tools/utensils clean and organized.
· Comply with allergen and sanitation guidelines. Ensure allergens are not introduced in dishes where they should not be; follow special orders.
· Minimize waste.
Food Service
· Set up food stations with all necessary supplies.
· Prepare cooking station for use, ensuring equipment is ready and in good repair.
· Safely cook and prepare all food, ensuring that dishes come out in high quality, and in a timely fashion.
· Clean up stations, properly label and store food.
· Communicate to managers any issues with food or equipment.
· Properly handle leftovers and unused food or ingredients, according to safety standards.
· Allergens: ensure allergens are not introduced in dishes where they should not be; follow special orders.
Dishwashing
· Ensuring the availability of clean dishes by washing dishes, pans, and flatware, and air drying properly.
· Wash, rinse, and sanitize all dishes properly.
· Preparing kitchen for next shift by cleaning and restocking cook stations.
· Maintain the dish machine and dish area.
Cleaning and Maintaining the BOH
· Make sure the kitchen and the back of house is always neat and tidy to create an optimal workspace for staff.
· Maintain a clean and organized kitchen, sanitizing surfaces, and taking out trash.
· Cleaning floors and surfaces, and ensuring clear walkways and safe workspaces for the kitchen staff.
· Organize kitchen and stockroom for optimal storage and maximum usage.
· Ensure all items are properly clean to remain aligned with Department of Health standards.
· Make sure food preparation and all storage areas align with health and safety standards.
REQUIRED AND PREFERRED QUALIFICATIONS:
- 2 years' experience as a BOH Team Member
