Job Purpose: The Pastry Supervisor will be responsible for overseeing daily production for the pastry department. S/he will excel at organizing the department to meet the demand and managing inventory in order to be always ahead without undermining quality. This key team member will be in charge of the preparation and execution of all pastry items and will assist in overseeing the overall running of the pastry kitchen, cleanliness and organization. Great people skills are a must as daily management of staff is a top priority.
Duties and Responsibilities (not limited to):
· Arrive to work on time for scheduled shift
· Follow all company policies and procedures for HACCP and Food Safety, frequently wash hands and change gloves. Keeps kitchen clean and organized during entire working shift and follows protocol for after shift
· Listen, be flexible, and provide positive feedback/encourage all team members
* Develop and prepare new items, working with Chef Suzanne Goin as needed
· Ask questions to Management if not sure of something
· Review daily production task lists with Pastry Lead and add/edit as needed
· Attention to details of department- orders, production levels, inventory
· Communicates frequently with Head Baker and other Managers
· Understands quality is key and always keeps an eye on all mixes, batters and baked goods
· Ensures proper recipe execution techniques and watch labor to eliminate overtime
· Monitor product levels of items daily
· Assist pastry cooks with questions/organization
· Communication with AGM/GM on products that do not meet company standards
· Assists with inventory at end of month
Conditions: Required to work weekends and Holidays. Must be able to lift 50 lb and stand for extended periods of time. Must be able to safely operate kitchen equipment, ie mixers, sheeter, etc. Ability to deal effectively and patiently with others. Ability to understand and follow oral and written instructions. Must be very responsible and have excellent communication skills with a positive attitude and professional appearance. Spanish speaking is a plus.
