Mujō, an omakase-style modern edomae sushi restaurant, is seeking an experienced Sushi Chef to join our team. We are a one star Michelin restaurant with 15 seats, open for dinner only. We are not a high-volume maki/sushi roll restaurant so the ideal candidate must be familiar with proper nigiri technique. Potential candidates must be competent with various aspects of fish butchery, particularly as applied to Japanese fish such as kohada, sanma, sayori, etc.
Due to the intimate nature of our restaurant, the Sushi Chef must work in a particularly clean and organized manner. You will be directly interacting and serving guests at the counter so you will need to present a polished and professional demeanor and image at all times. Upscale sushi experience is important for this position.
This is a full time position with services 5 days a week.
Knowledge, Skills, and Abilities:
- 3+ years in the hospitality industry, in a notable sushi restaurant.
- Knowledge of sake preferred, but not required;
- Japanese fish butchery and Japanese cuisine experience
- Experience in fine dining restaurants and service;
- Strong interpersonal skills and the ability to work effectively in an open-kitchen and chef’s counter environment;
- Ability to communicate and work in English, especially while multi-tasking and interacting with guests;
- Attention to professional appearance, care and grooming are necessary for consideration;
