Empire Cake, a popular gourmet American-style bakery in Chelsea, is seeking a qualified candidate for a full-time position as HEAD of our cake decorating department. The position requires both cake decorating expertise and the skills needed to manage our small team of cake decorators and coverers.
The head cake decorator's responsibilities fall into several categories:
(1) supervising the work of a team of 4-5 cake decorators and cake coverers, including ensuring that custom orders are completed properly and on time, organizing the work week (including work schedules), assigning cake orders to decorators, and working closely with our cake consultants regarding custom orders;
(2) advising the team of decorators and coverers on decorating techniques, identifying weaknesses in skill sets and facilitating improvements;
(3) designing and decorating, from start to finish, custom cakes, including tiered celebration and wedding cakes, covered in both buttercream and fondant, and decorated with fondant and other materials;
(4) working with the owners and cake consultants to design, create and price new cakes for the bakery's catalog, window displays, etc.;
(5) helping to hire and train new cake decorators.
The ideal candidate will:
* Have several years experience as a cake decorator in a busy, high-end bakery, preferably with some supervisory experience.
* Have highly developed cake decorating skills (including the ability to quickly sculpt fondant into neat and accurate 2D and 3D figures, cover cakes, inscribe cakes and perfectly stack tiered cakes).
* Have well developed artistic talents that include a skilled sense of composition and design, a great eye for color, and the ability to accurately recreate a color in fondant from a swatch.
* Be able to create designs with or without reference materials.
* Be able to lead, organize and motivate a team of professionals.
* Be able to issue instructions and direction, and have excellent communication skills.
* Be professional, reliable, organized and efficient, with excellent time management skills.
* Have a positive, high energy, friendly, enthusiastic, team-oriented attitude.
* Be able to stay calm under pressure.
Culinary school training is a plus, but not necessary; however, several years of professional experience as a cake decorator (including work with fondant and tiered cakes) is required.
